S2716DG, GTX 1080 unable to go over 85Hz on DisplayPort

Computer: Motherboard Z97-PRO GAMER (BIOS Date: 02/26/16 16:27:23 Ver: 22.03)
GPU: ASUS NVIDIA GeForce GTX 1080 8GB ROG DirectCU II (STRIX-GTX1080-A8G-GAMING, VBIOS 86.04.17.00.AS08)
Driver: v388.00 for GTX 1080 and driver version 1.0.0.0 for the Dell S2716DG
Ports: 2x HDMI (2.0b)/2x DisplayPort (1.4)/1x DVI-D
Cables: GTX 1080 DP > Dell S2716DG DP
OS: Windows 10 Pro (Build 16299.19)
Power Plan: High performance, PCI-e Link State Off
Resolution: 2560x1440,85Hz G-SYNC Mode - Maxiumum 2560x1440,144Hz
ISSUES on HDMI: None so far
ISSUES on DP: Monitor goes into power saving mode (1) if I configure the display properties above 85Hz on DP in Windows (2) when I start a game and (3) during BIOS or POST screens.
Other info: I have previously had a GTX 970 working with this monitor and display cable at 144Hz. My current setup is with a new graphics card (ie. GTX 1080) which is one day old.
Things I've tried: flashing the BIOS back to defaults. Checking for updated GPU firmware (none). Checking for updated Dell driver (none since 2015). Putting the GPU through a 3DMark Stress test (passed). Playing games on HDMI (no issues so far).
Next thing I'm trying: posting here =) I've got another DP cable arriving in the next day or 2 so I plan to try that, but other than that any suggestions?

The fact that your A03 worked above 85Hz on the older GTX 970 shows us that the S2716DG hardware is capable of the higher Hz and is functional. So that leaves the GTX 1080 or its driver as the culprit here. Did you test all of the GTX 1080 DP out ports using the DP to DP cable that shipped in the S2716DG box?

Cheers Chris - I'm inclined to think the same.
With regards to the issue with the screen not appearing during BIOS POST, I think that was user-error on my part as if I powered everything down and put any of the DP cables in they worked from boot. I was chopping-and-changing between HDMI and DP pretty frequently and hadn't taken time to fully power-down the computer at the plug before switching cables. HDMI seems pretty tolerant to that kind of thing but DP looks to be a bit more fussy.
The overarching issue is still there in Windows, except now with the S2716DG I get 1440p at a maximum of 24Hz. I've tried literally 5 different branded DisplayPort cables, including one that I think came with the monitor originally and so I can be confident it's not a DP cable problem. When I monitor the OSD during POST it runs at 1024x768 @ 60Hz on DisplayPort and then as soon as Windows kicks-in it will drop to 2440x1440p @24Hz on GSYNC. Switching GSYNC off doesn't seem to make a difference and neither does clean installing NVIDIA drivers.
I was able to borrow a BenQ GW2765 from a mate and on HDMI I get 2440x1440p @ 60Hz, but when I power-down and power-up with display port I get a maximum of 1024x768 @ 60Hz. The 60Hz is fine as that's all that monitor goes up to, but I should still be able to get higher resolutions.
Unless anybody has any other suggestions, my next-step is to take the GTX 1080 back to where I bought-it and ask if they can demonstrate it running at 1440p @ 144Hz on a GSYNC monitor.

Just to wrap-this-up, the fault was with the GTX 1080 and its replacement is working as expected.
