Upgrade the Perc H310
I have an old Dell R520 with a Perc H310 controller currently. I am re-purposing this server to be a Veeam backup server. Currently, the performance of the H310 is not that fast. I am wondering if I can upgrade the controller to a different one that will be faster. If I change this to a 12GB SAS HBA, will it just be an easy replace? I will be using all 8 SAS drives, running Windows Server 2016 with Storage Space REFS. Not really using hardware RAID in this server. Would it be better to use a PERC H330 and hardware RAID?

No, it will not be an easy change. I don't show either of the controllers you are wanting to switch to as validated for the R520. Switching to a controller that is not validated for the system will be trial and error on your part.
Storage Spaces Direct is very picky about what controller it will allow to be used. The H310 will not work with SD2, and the H330 will not work either. The 12GB SAS HBA and the HBA330 should both work, but I would recommend reviewing SD2 documentation regarding validated/compatible controllers to be sure.

Thanks for the reply. Just to clarify, 12GB SAS HBA should work with SD2 but the controller will not work with the R520 (currently configured with a PERC H310)

Yes, it should work with SD2, but I haven't check the compatibility list to be certain. SD2 does not work with hybrid pass-through controllers like the H310. It only works with HBAs/pass-throughs like the 12GB SAS HBA.
It may work with the R520. It is not validated for the R520. I don't show any internal HBAs validated for the R520. The external version of the SAS 6GB HBA is validated for the R520.
