Yes you are correct that you cannot disable collection from certain clients that are configured on a backup server.
In order to work around the issue of the database filling up from this client, you could configure an aggressive Datamine Maintenance Plan and just assign it to this client in DPA. e.g. for everything else keep the data for 1 year, and for this client create a plan that deletes it after 1 week.
