To do this, you need four drives - effectively, two RAID 0 arrays, one a mirror of the other.

OK, lets say my 4th HDD has finally arrived in the mail and I'm ready for the Raid 0 & 1 set up. Does this mean I have to go back to the beginning and wipe my first 2 - 160Gb Raid 0 drives clean? Or can I set up the raid array with the 2 - 300Gb drives mirroring the other pair and just move on.

You should be able to go into the raid setup facility in the boot cycle and hit ctrl I, and create a new array as raid 1 on your new drives. First step is to make a good backup image of your raid 0 just in case. be sure to image the 2 hidden partitions(dellrestore, and dellutility, along with your visible c: drive (ghost 8, or 9 is great for this,(worth the price)) then when you create your mirror array, take your time and make sure which drives your trying to configure so you dont mess up your raid 0.
