MD3200 & ESXi 7
So...yea. We have a MD3200 (which probably needs the firmware update still) and we're looking to move to vSphere 7. However, it's not on VMWare's HCL, and neither is the Dell SAS 6Gbps cards that we use to connect to the MD3200.
...and we tried anyways. Spoiler: It doesn't work. I belive the root is the removal of the linux-based drivers from vSphere. The host (Dell R630 & Dell R640) sees the SAS card, but won't/can't use it, and so the datastore isn't recognized.
So, we're stuck at vSphere 6.7 until further notice.
Has anyone else tried vSphere 7 with the MD3200 and had any success?

Yes it will work. You need the 12G SAS HBA and a HD-SAS-Mini to HD-SAS cable. I have test it last week on a customer site.
On the other hand... why not replacing a 10Y old storage?

That's excellent knowing it will work!
For not replacing, it's largely a timing & cost thing. Being a non-profit and frugal, discarding perfectly good, working equipment isn't really in the cards. We did get some new storage (SCv3020), but don't have the funds currently to put enough storage in it to fully replace the older equipment.

The MD3200 never will work with the 6GB SAS cards as support for those was dropped in ESXi 7. We've stayed on 6.7 for now until we can move everything off of the old storage.
If you have the 12GB cards and the appropriate HD-SAS-Mini to HD-SAS cable, then it should "just work." We don't know what you've tried.
